Whipped Feta with Honey & Thyme

Cloud-soft whipped feta with a drizzle of honey and fresh thyme — five minutes to the most-requested thing on any Mediterranean table.

This is barely a recipe and entirely a crowd-pleaser. Make it once and it becomes the thing people ask you to bring.

Ingredients

  • 200g feta, broken into chunks
  • 75g Greek yoghurt
  • 2 tbsp olive oil, plus more to serve
  • 1 tbsp honey
  • A few sprigs of fresh thyme
  • Black pepper
  • Warm bread or crudités, to serve

Method

    Blend the feta, yoghurt, and olive oil until completely smooth and fluffy.

    Spread onto a plate with the back of a spoon, making generous swooshes.

    Drizzle with honey and a little more olive oil, scatter with thyme and black pepper.

    Serve with warm bread or crisp vegetables.

Can I make it ahead?

Yes — whip it up to a day ahead and keep covered in the fridge. Add the honey and thyme just before serving.

No food processor?

Mash thoroughly with a fork — it will be a little more rustic but just as good.
